I wanted a fabulous cake for my 40th but wanted to design it so with the help of my daughter and husband, we came up with the Superstar Mama’s 40th Disco Ball Cake, with chocolate middle layer, and bottom with fun polka dots. Each layer was a different flavored pound cake.
The easiest layer was the bottom in which I used a scalloped pan. We made our own marshmallow fondant which is much cheaper and tastier than store bought.
The second layer was a chocolate pound cake. I had a lot of trouble trying to make a full sheet of chocolate fondant so I came up with cutting small circles and squares and arranging them on the circular cake and brushing each one with kahlua which made it delicious!
The top layer was the most difficult using the 2 half circle pans. My husband assembled this since he is the engineer. Once he got it into a ball and iced it, we had more trouble trying to figure out how to get the disco ball look. We first tried to put a full sheet of fondant and then taking a small square cutter and gently pushing it to give it the mirrored look. That didn’t work so I suggested that we cut out all the squares that took up a lot of time.
We used silver edible dust to give off the perfect effect. We then took melted chocolate and drizzled it into “40” on toothpicks on wax paper. Cooled it and topped the cake to celebrate my big day. The cake was a huge hit and even tasted delicious- every layer!
