This Thanksgiving Turkey Cake is a pumpkin spice cake with cream cheese frosting. I used 3 rectangular cake pans, frosted the layers and let it sit in the freezer for about an hour. I then carved out the basic shape of the body and covered it with fondant that was tinted with a copper tone.
The legs and wings were made with rice crispy treats and also covered with the same fondant. I mixed brown coloring with vodka and applied the color to the cake with a sponge to produce a textured effect. The wings and legs were attached with extra large straws. The stuffing is made with bread pudding that was refrigerated and then cut into squares.
I served this cake with a rum sauce in a gravy boat, the rum sauce has the same color and consistency of gravy.
