Coolest Thomas And Mountain Cake

For my two-year son’s birthday I wanted to do a Thomas-themed cake. I’d bought a Thomas candle and needed inspiration. I found this site with lots of great ideas – here’s the Thomas and mountain cake we made. I used a double recipe of homemade white cake (with vanilla bean instead of vanilla extract) with raspberry filling and a double batch of vanilla/lemon buttercream icing coloured green.

I baked the cake in four round pans. Using lots of raspberry jam between the layers, I sliced and stacked two of the layers to get a stepped effect for the base of the mountain. I left space for a tunnel. The portion of the track running through the tunnel was put down. We used licorice (cut into short bits) and string licorice for the track.

Using graham cookies (and jam to help it stick) I helped support the tunnel sides and top. The remaining two layers of cake were sliced and stacked on their side to form the top of the mountain.

The entire cake was iced with the buttercream icing creating a slope for track to run up to the top tunnel entrance. A piece of black cardboard paper was used for the tunnel entrance at the top of the mountain. The remaining track was laid down.

The Thomas candle we purchased was secured to the track with jam and a toy tree from another train set set into the icing. Shredded coconut was placed and sprinkled on the cake to look like snow, and green sparkles for grass.

  1. i just wanted to say great cake. it helped out so much that you took a picture of just the cakes before you frosted them. sometimes its hard to picture what to do when the frosting is covering the cakes.

  2. Thanks for posting this! My son asked to make a mountain cake with tigers on it for his cubscout Blue and Gold banquet. We are using your cake as a blueprint to make a mountain with a tiger den in it!

  3. Thanks for the idea. My grandchildren have asked that I make a cake to look like Stone Mountain because that is where we have our family reunions. I could not get it wrapped around my brain how to start until I saw your cake un-frosted. Hats off to you:)
