This is a Thomas the Tank Engine Birthday Cake that I made for my four year old son’s last birthday. He is a huge Thomas fan and he loved it so I hope your child will too. I made it by baking two Madeira rectangular pound cakes- split and filled with vanilla cream and lemon curd. I cut a third off one of the cakes and turned it upright at the back of the second cake and used the remaining two thirds as a carriage.
I covered the cake in in a thin layer of buttercream icing then it was covered in rolled fondant. I filled the carriage with sweets and mini marshmallows and the face for Thomas is one I popped off the front of one of my son’s toys!
I used Oreo cookies for the wheels. I used little gem sweets as the lights and licorice straps as the cables to attach the carriage to the main train. The windows and coupling I piped on with icing sugar paste. I hope that you like it!
