This Topsy Turvy 60th Birthday Cake was for my mother in law who is diabetic. I also had a sister in law at the time who was pregnant with twins and had gestational diabetes. So I had to find a cake that they both could eat.
I did the bottom tier in a white bean cake, the second tier in a black bean cake and the top tier in a regular white cake for the rest of us. It was my first time doing a Topsy Turvy cake and the only thing I would have done different is to use a bigger range of sizes on the cakes themselves so there would be a more noticeable size change.
I did a black, white and hot pink theme and I sculpted the figure on top out of modeling chocolate to look like my mother in law! I made balls out of fondant and layered those on the bottom and even though I wasn’t really planning on the pattern it just happened that way and turned out pretty cool!
The whole thing was a surprise for her and everyone loved that white and black bean cake! Hope you enjoy!
