My first attempt at a Topsy Turvy cake for my brother’s 15th birthday. The layers are (2) 8″cakes, (2) 6″cakes and (1) 4″ cake. I made homemade (white) marshmallow fondant days prior which was relatively easy to use and MUCH less expensive plus it was tasty.
The cake was a chocolate chip pound cake (would NOT use chocolate chips again, made the carving a bit challenging) filled each layer with chocolate truffle filling. The whole thing was covered with buttercream then the (white homemade) fondant was attached.
I stabilized the layers with dowels to help with the extra “falling” effect. The layers were also anchored with some buttercream in between. The colored fondant (red, Blue, Green, Yellow) is the Wilton brand from Michael’s pre-made stuff that I used cookie cutters with. The stars on top is colored fondant attached to white floral wire and allowed to dry overnight so they would not collapse.
I also painted the stars with some gold dust, first dipped paintbrush in vodka (sterile reasons & the dust adheres MUCH better this way) then in the gold dust and painted away, to give the stars there finishing “touch”.

This was the best tasting cake I ever had, Everyone at the party and that have seen photos all say it looks like an Ace of cake,Cake, Cant wait to see my cake.
