Coolest Topsy Turvy Surprise Cake

One of my good friend’s and coworker approached me and asked me to make a cake for her daughter’s graduation party. Of course I couldn’t refuse, but I wanted it to be a surprise of what kind of cake she was getting. She told me her daughter’s favorite colors, and cake flavors and I told her that I would take care of the rest.

I have never made a Topsy Turvy cake before, but always admired the design. The first tier I made caramel apple with cream cheese crumb coat and filling. The middle tier is strawberry with strawberry crumb and filling, and the final tier is double dark chocolate with dark chocolate crumb and filling. After the assembly, I decorated with her daughter’s favorite colors: purple red and orange. She was expecting a regular sheet cake with writing on it. I am not sure what excited me more, the surprise of this kind of cake for her party, or the fact that I did well on my first cake of this design!

She was very pleased and surprised. Congratulations to all of the classes of 2013!

PS. This was also my first time using fondant.
