This Train Birthday Cake was a labor of love for me. It took most of an afternoon and until 1am in the morning to finish it. The train cake pan was a great idea except that you obviously had to coat every nook and cranny with Crisco (I used a q-tip to get in all the crevices) and make sure that it was entirely floured before pouring in the batter.
Then the decoration and assembly took quite some time. I used a bunch of different candies to decorate all of the freight cars. I put three marshmallows on a bent paper clip to make it look like steam coming out of the funnel. I covered a foam board in green craft foil and made the tracks out of licorice. I used some of the trees from our real H.O train set, put Thomas’s #1 on the engine and voila, we had a train cake for my son’s 3rd birthday.
He was SO excited when he saw it. He got to eat the engine, while his friends each picked a freight car for themselves. I also made cupcakes with blue frosting for parents to eat.
This year he wants a Gordon train cake. Wish me luck!
