My daughter LOVES Wow Wow Wubbzy, but I couldn’t find a store that would make a cake with this theme, so I had to get creative and make my own Wow Wow Wubbzy Birthday Cake.
I used a devil’s food cake mix for the sheet cake. I torted it using a cake leveler and filled it with raspberry jam. With jam fillings, you need to make sure you pipe a thick dam of the icing you will use around the very edge of the layer before you spread the jam. That keeps the jam from gushing out the sides of the cake when you put the top on which will ruin your frosting. I frosted the top and sides with buttercream and piped a pink shell border with a star tip.
For Wubzzy, I printed out a picture on paper, then covered it with a sheet of wax paper. I melted dark chocolate and put it in a candy making squeeze bottle to trace the outside lines. I put that in the fridge to harden and melted some white chocolate, to which I added Wilton yellow food coloring PASTE, NOT LIQUID. If you use liquid, it can cause melted candy to seize up, especially if you are using candy melts (learned this the hard way). Once the outline was dry, I flooded it with the yellow chocolate and added the eyes, nose and mouth. I let it dry in the fridge and peeled it VERY carefully off the wax paper. It still cracked at the tail, but I just stuck it on and hoped no one noticed (they didn’t).
The letters are made from candy melts colored with Wilton pink paste coloring in an alphabet candy mold. I finished it by adding some flower-shaped sprinkles to the top and sides. It looked really cute on the Wubbzy table cloth I found. My daughter loved it!
