Cool Homemade Cowboy Cake

I made this cake for my son’s second birthday. We had a cowboy themed party, and my son dressed in a cowboy hat and boots. The cake is just a basic 8 in round lemon cake. I let the cake cool off completely and then trimmed the top to make it flat and not raised up in the middle.

I frosted it with a thin layer of lemon frosting for a crumb coat and refrigerated it for about 10 min. After the crumb coat had hardened I added a thick layer of vanilla frosting. The rope lasso is made from fondant and dyed brown with paste food coloring using a toothpick. I rolled out four long “worms” with the fondant, like you would play-doh or clay, and and let them sit on the counter for about 10-15 min. to dry out a little. Then I twisted two of them together to form the bottom rope and the other two to form the top rope.

Make sure your frosting is still wet when you add the fondant, if your frosting is too dry you’ll need to add a small bead of fresh frosting around the bottom and top edge of your cake to act as a glue to stick on your rope. I made the top rope slightly longer so it could hang down the side of the cake like a lasso. I got the idea from a picture I saw online but I changed it somewhat by adding the cowboy hat, sheriff badge, and Woody toy.

The spacing of “Happy Birthday” was a little off, but no one seemed to mind.
