Evan’s train cake…2nd year birthday.

I have to thank the other people on this site for great ideas. I just did not want to get any ole cake from a store…I wanted it to be special and man was it ever.

I used 3 cake mixes and to make them a pound cake recipe I used the box mix with 1 pkg instant pudding mix, 4 eggs 3/4C oil & 1C water. I used vanilla for the vanilla cake and chocolate for the chocolate cake. This will make your cakes workable and easy to cut.

I made my cars out of mini loaf pans (I made 10 that took 2 of the mixes. Baked those, then used the 3rd box of cake mix for my full size loaf pan and 1 pineapple juice can. (put it in something because mine overflowed.

I allowed them to cool and then froze them until I was ready to use them. My mother in-law, made a fabulous buttercream frosting and we died different batches with all the vibrant colors. I was so lucky because my son’s birthday falls one week after Halloween so I used all the left over candy for the train. The only candy I purchased was licorice for the track and cookies (keebler choc covered wafer cookies), oreos for wheels.

I crushed a whole bag of butterfingers for the gravel under the tracks. I used mini marshmallows for smoke and the bottom of an ice cream cone for the stack on the engine. I bought my son small animals that he could play with after, and they were used on three of the cars. Pretzel sticks for bars. This cake was a huge hit, and fun and so special because I did it myself!
