I made this No.1 birthday cake for my daughter’s birthday. It was my first attempt at using fondant icing and the result was fantastic.
I hired the No.1 tin from the local cake decorating shop and used a Madeira cake mix also purchased from store.
I baked the cake on Tuesday ready to be decorated on Saturday for her birthday party. Was a little worried wouldn’t keep, but wrapped in cling wrap and then tin foil and cake was still fine.
I covered cake with mock cream, rolled fondant out and placed over cake, using the side of my hand I pressed over sides of the cake. I decorated with fondant butterflies (made couple of weekends before, which I stored in airtight container). I then piped around edge of cake with pink royal icing. With the left over butterflies, I used them to decorate cupcakes.
To make candle stand up in top corner, I piped a larger star of icing and placed candle in immediately before it set.
Everyone one was very impressed, my son now has asked for a Scooby-Do cake for his 6th birthday…….what have I started??
