My daughter wanted a rainbow cake for her 9th birthday…I struggled trying to come up with a plan that would not lead to a disaster! One day it came to me that between the layers of cake I could use colored, stiffly beaten whipped cream. I made a single recipe homemade white cake and divided it evenly into 4 bowls, chose the proper corresponding rainbow colors and mixed in the food coloring then baked the four thin layers. Next I whipped a lot of cream, divided it evenly into three bowls, mixed in the remaining rainbow colors and then when the cake was cooled I assembled the cake good old ROYGBIV order and frosted it with sky blue cream cheese frosting and circled it with sky blue cottom candy and rainbow candles….boy was everyone surprised when we sliced into it…especially my daughter!
