My daughter was all about being a Princess when she was 2, so for her third birthday we had a Princess theme. This cake was by far my most challenging but was so much fun. I baked four assorted flavored 9″ square cakes; layered the first three, cut the fourth cake in half to make the top of the castle. Covered the cake in basic homemade buttercream icing using the remaining icing for the ivy and windows. I covered five waffle ice cream cones in the icing and rolled them in pink and blue sugar crystals. Placed a toothpick with a flag on the tops of the cones. The grass surrounding the cake is tinted coconut flakes and the walk way to the front door is chocolate M&Ms. This was a total hit! I am not a professional cake decorator but love making cakes that make my daughter smile! You only have one birthday a year so make the best of it!
