This cake was made for my son Nathan who is allergic to eggs, milk, and wheat/Gluten. I went to the health food store and purchased allergen free chocolate cake mix and vanilla frosting mix that I had to dye myself with gluten free dyes. I allowed the frosting to sit and soften before frosting my cake I baked late the night before.I frosted one side of the road then the other carefully after drawing a road shape with frosting. I then filled in the asphalt and placed the trucks and trees on the scene. I used crumbled up chocolate cake for the dirt piles, and dyed frosting for the asphalt spilling out of the mixer. I tried to give it as much detail as possible. The cake turned out great and it tasted good to! My son loved it.Although many people at the party were reluctant to try the allergen free cake so I know that next year I will be making two cakes. For any one out there who’s child is allergic, check your local coop for vegan and gluten free suggestions!They turn out just as beautiful.
