I made this cake for a friends Wedding. using boxed red velvet cake mix and my own homemade cream cheese frosting. I doubled the recipes for the top and middle tier and 4x for the bottom. I covered the tiers in marshmallow fondant that I made, with a butter cream frosting I also made. I made the butter cream somewhat thicker than usual to get the swirls just right. The butterflies are made out of gum paste using a butterfly shaped cutter. I then decorated the butterflies with pink pearl dust powder that I mixed with a small amount of vodka. (the vodka evaporates and doesn’t leave the cake wet and sticky like water could.)
I also used pink and green pearls around the bottom of the Top and middle tiers. And to decorate the top tier. I used actual ribbon because I could not get “real” ribbon in time. (the “real” ribbon is edible.) I made the cake three days before covered it in the cream cheese frosting and let sit over night. The next morning, I covered the cake with the fondant. And went to work on the butterflies. The smaller butterflies on the cake I made using a small heart shaped fondant cutter. I cut the bottom of the heart off to make the shape of the wings. There you have it. A simple but elegant cake.
