This cake was my very first “smooth icing” cake. STRESS!! I made it harder that it should have been by not putting a TON on icing on at first and then smoothing it out, once I figured out what I was doing I finally got it.
For a smooth icing cake you almost HAVE to have a turntable. It is much easier and makes for a beautiful cake.
I first dyed my icing a very boyish blue. Then I started to ice the cake. You will need lots of hot water and a towel. You have to be very easy to not get crumbs in the icing and this is easier to do if you are working with a cake that you just pulled out of the freezer! Keep hot water beside you to dip you icing tool into. I also made the mistake of icing the top cake while on the bottom. BAD IDEA, ice your top cake and then place it on top with a spatcula.
I bought the edible decorations and put them on the side and then I lined yellow icing around the top and bottom using a star tip.
