This was for my son’s first birthday. Deciding I’d be a proper mother who made fancy birthday cakes I was lucky enough to practice two days previous with both my nephew’s then niece’s birthday cakes. By the third late and hot summers night I was quickly learning a few tricks, like freeze the cake first to help cut the shape and set the icing (or else it melts as soon as it is piped out) to help attempt a more adventurous cake.
I used Jason the dog as a model, shaping and stacking homemade madeira cakes to look like a dog. I had to use a few toothpicks along the way to hold up his head and keep the ears on. After coating the cake with a apricot glance I set about piping butter icing in different colours for the shaggy fur. The eyes and nose were made out of sugar paste icing.
I think he liked the cake, everyone was really impressed by it. It was however a little dry to eat, but by the that evening the glaze had soaked into the cake and it was lovely and moist. I think I ate most of the leftovers by myself. OPS! What I have learnt since learnt it is easier time wise to buy the cake then ice it rather than doing it all by scratch.
