My son is obsessed with monster trucks. He had seen a picture of an El Toro Loco cake and fell in love. I had never even attempted to decorate a cake before. My mother found the Wilton 3D Cruiser Pan in Atlanta (I was unsuccessful in trying to find it in our home town.).
The cake took me hours to complete, but to be honest, it wasn’t difficult. I went to the Wal-Mart bakery and asked that they dip the crullers into fudge for the tires. I used a friend’s recipe for buttercream icing, but purchased the Funfetti box cake my son requested.
I cut a cake board to the cake’s exact size. I had never attempted to pipe icing before, but I found using the star tip to be pretty easy. I used Wilton’s no taste red for the truck, chocolate icing (from a can) for the windows, and regular food coloring to dye just a bit of icing for the flames.
After baking and icing the cake, I placed the cake on top of a stack of 3 old plastic take out sushi containers flipped upside down. This worked perfectly as it was the size of the main body of the cake and looked like an undercarriage. I used 4 plastic cake stabilizers cut down to secure the front and back of the truck. I then used the extra fudge from the donuts to cover the stabilizers.
The truck was originally supposed to be El Toro Loco, and we had made horns out of rice krispy treats. Unfortunately, we forgot to put them on before the party! I found a small plastic disk in my kiddo’s toy box that worked perfectly for a place to add the ring. It matched the cake perfectly. We had purchased mini marshmallows to make the teeth, but they wouldn’t stick! So, he went without teeth.
Once the cake was decorated and placed on the platform, I placed this (glued down with icing) onto a second large cake board covered in foil. Then I used the rest of the fudge, chocolate icing, crushed oreos, and brown sugar to make mud and dirt on the board.
