First I found the Rainbow Fairy Barbie that my niece wanted for the cake. A real barbie is too tall to use the pan that you can buy for a doll cake so I ended up crafting the skirt myself by using a bundt pan, a 10″ round cake for the bottom and a small round on top that I cut into the skirt shape. I also make a 14″ round pan for the bottom layer for the barbie to sit on. Note – I had to use tiers in the bottom layer since the top is so heavy to stabilize the cake. Then the tough part, I had to make 6 colors of icing and marshmallow fondant. (You can find the recipe easily, it’s very messy but tastes the best.)
Decorating was pretty easy but time consuming because of the 6 rainbow colors. I rolled out and cut the fondant into strips and just laid them over the frosted ‘skirt’.
I made mini bundt cakes and covered them in leftover fondant and decorated with my nieces name in rainbow candles I lucked out finding and some smaller fairy dolls I found.
This is my favorite cake that I’ve made so far because it’s so colorful. If you have patience, a lot of it, this cake isn’t actually that difficult to make.
