I made this cake two years ago when my daughter turned three. It was a lot of work, but well worth it in the end. My daughter wanted a tangle birthday party so I set out on a mission to make her a fun cake. I had no idea what I was doing but was ready for a challenge! My husband thought I was crazy! I drew up some plans and this is what I came up with.
The tower is made up of rice crispy treats. I used a wedding cake stand post to help support the tower. I wanted my daughter to have her own special cake so I made the top tower out of cake. The two bottom tiers were chocolate cake with chocolate mouse and lemon cake with raspberry filling. I covered the entire cake in fondant and used butter cream for some detailing.
The cake turned out to be as tall as my daughter! It was so big we could not fit it in the car to take it to her party venue. The venue was just down the road so we put the cake on top of the trunk of the car and slowly drove. I ran along the side of the car praying and hoping it would not fall! It made it! The cake was a hit at the party! She loved the cake! My husband was surprised and impressed! Two years later we still talk how awesome and fun the cake was! It is a cake she will always remember.
