This cake was a labor of love – and the entire thing – everything in it – is gluten-free. All of the candies are fruit-sweetened, as well. And ALL organic. I don’t play.
For the base of the cake I took a 4 foot board and covered it with tinfoil. I then used icing sugar and water to make a paste and covered the board with that. I dyed some shredded coconut with green food colouring (the coconut and icing sugar didn’t matter much to me ingredient-wise because I knew they weren’t going to be eaten) for the grass. I laid tracks down across the board in a winding pattern – gluten-free wafers. Then I sprinkled cocoa crispy rice (Koala Crisps) between the tracks for gravel. I let that dry while I prepared the trains.
I used 9×13 cake pans and made two or three cakes – I forget now, as it was a year ago plus. I then cut those cakes into bits of the trains and pieced them all together, gluing them with the icing (butter cream icing). I frosted them all and decorated with string licorice, jelly beans, chocolate chips (coal) and gummi bears. Voila – a train cake. The whole thing took about 8 hours I think. I let the cakes set in the fridge overnight and then before the party, I laid them on the tracks.
This cake wowed them all. It was great fun to make, and everyone LOVED it. Success!
