My son wanted a red train cake so I decided to try it. I used to 5 x 9 loaf pans. I filled them 2/3 full and baked them using 3 boxes of cake mix. I also prepared 12 cupcakes from part of the same mix. I fosted 1 cupcake white and removed the top of the second cupcake this forms the round part of the train. Cut approximately 1/3 of 1 loaf cake off and tilt up on the end of the whole loaf cake, trim to make the cabin. frost entire loaf cake and cabin in one color frosting. Remove wrappers from cupcakes and cut as above mentioned. lay sideways on top of whole loaf cake in front of the cabin piece. Make sure it touches the cabin. Frost sides of cupcake only..the top of the whole cupcake should already be frosted. Use 2/3 loaf cake to make the coal car. Attach coal car to engine with a candy cane. Pipe icing to make decorations and a face. Very easy to make work.
